How to cook a killer meal in 20 minutes

Family dinner time is important in our house. It’s a goal of mine to make a home cooked meal at least three to four times a week. Now to some that may sound like no big deal. Three to four times might even be a under achievement. But to myself and others, home cooked meals three to four times a week is tough when you factor in being away for  40 hours of work and then almost 10 hours worth of commuting.

Regardless of whether you are in my out-of-home working mom camp or not I believe it would be safe to say that we are all looking for wholesome easy meal ideas. So if you are interested in an easy one pot flavorful dinner, read on!

Because time is such an issue for me I love using my Crock-Pot. I’ve done so many dishes in it from whole chickens, soups and even desserts. Yes, I’ve done a chocolate lava cake in my slow cooker.



1 beef chuck pot roast
1 small bag of small white potatoes
2 cups peeled baby carrots (buy them already peeled and washed. saves more time)
5 to 10 mushrooms cut in half
1 small onion quartered and separated
1/2 pouch Lipton onion soup mix
Garlic powder
1 – 2 teaspoons Lawry’s seasoning powder
1/4 cup red wine

Season roast with garlic powder and Lawry’s. I go a little lighter on the seasoning salt and then re-season later to taste. Then season and rub in half the pouch of soup mix on the roast. Set the roast aside and load your veggies in the bottom. Place your roast on top of the veggies. Slowly pour the red wine all over the top of the roast. Cover and set for 8-10 hours. The roast should be falling apart when you take it out. If it isn’t let it cook longer. I usually get a medium-sized roast and set it for 8 hours on the auto timer and then it continues to cook on warm for another hour or so while I drive home. Once you take the roast and veggies out, strain the juice and thicken in a sauce pan with equal parts water and cornstarch to make a gravy.

And with that, you are done. It will taste like you slaved all day in the kitchen over dinner but it really only takes about 20 minutes of prep and plating time. Dinner is served!

    Crock pots are a life saver. They’re perfect for busy moms who barely have time to cook dinner when they get home from work. This is one recipe that’s worth trying! It’s packed with flavor and I’m sure the kids will like it as well.

    OMG this looks so tasty (and easy!) We make something similar (just pot roast, green beans, Lipton Onion Soup Mix, and a cup of water.) I love the idea of adding in wine!
